The West Australian's Tastes of Broome A region's history and mood is so often told through its cuisine, finds Gemma Nisbet.

In the elegant surrounds of Cygnet Bay Pearls' showroom in Broome's Chinatown, a woman wearing a smart black dress and adorned with pearls at her ears, neck and fingers is prising open a pearl oyster with a long knife.

"Obviously this isn't normally done in a gallery," laughs Jessie Bancroft, Cygnet Bay Pearl Farm's tourism and accommodation manager, as she opens the oyster to reveal a good-sized pearl.

The gem isn't the reason we're here, though. Instead I've come pretty much fresh off the plane from Perth to taste a flavour that's just about as distinctively Broome as it gets: pearl meat.
